Princess Cake– White chiffon cake with raspberry jam, custard, and whipped cream, covered in our homemade marzipan. Mango-Passion Fruit Cake – Three layers of white chiffon cake with a layer of passion fruit mousse, a layer of mango mousse, topped with lemon curd and fresh fruit. Chocolate-Hazelnut Cake – Three layers of chocolate chiffon cake, a layer of chocolate mousse and a layer of hazelnut mousse, all atop a crunchy dark chocolate-hazelnut base. Glazed in dark chocolate ganache, and finished with chopped toasted hazelnuts and a bouquet of dark chocolate fans. Chocolate-Salted Caramel Cake – Three layers of chocolate cake, a layer of chocolate mousse and a layer of salted caramel mousse, and decorated with dark chocolate ganache, caramel sprinkles and topped with a bouquet of dark chocolate fans. Raspberry Surprise – Almond meringue base with two layers of dense chocolate (think brownie) cake filled with chocolate mousse, topped with raspberry whipped cream and seasonal berries. Napoleon/Mille-feuille – Layers of all-butter puff pastry, a thin layer of raspberry jam, and fresh custard, topped with white icing and chocolate. St. Honoré Cake* – A puff pastry bottom, with rum-soaked chiffon, raspberry jam, diplomat cream laced with rum, whipped cream, and decorated with cream puffs covered in hard caramel which are also filled with rum-cream, and raspberries. Only made in 8” or larger.
