Situated in the picturesque Wicker Park neighborhood in Chicago, Alliance Bakery features fine European pastries and desserts, custom-designed cakes to suit any occasion, and a full espresso bar. Come visit us and enjoy our free wifi room and outdoor café. Chef Peter Rios operates the Alliance Bakery & Café. Chef Rios has served as executive pastry chef at the Fairmont Hotel Chicago leading a team of ten in the pastry department. He created Asian and global inspired desserts at Aria, the hotel’s award-winning restaurant. The Aria Sushi Bar, Lobby Lounge and the Club Lounge were other outlets at the Fairmont which offered international desserts. Prior to Fairmont Hotel, Chef Rios served as executive pastry chef at Sofitel Hotel Chicago for almost four years. He enjoyed the challenge of preparing modern French pastries for the flagship hotel of this French hotel company. As executive pastry chef for the Art Institute of Chicago for six years, Chef Rios created many themed buffets and displayed his talents in matching modern and traditional pastry to art exhibits and shows for this famous museum. Chef Rios has trained extensively in Europe and has participated in demonstrations in Paris, Lyon and Nice, France and most recently in Chocolate and Pastry seminars in Istanbul, Turkey. Chef Rios is a graduate of Kendall College. He has participated is multiple advanced courses at the French Pastry School Chicago since 1994 were he continues to learn and evolve in the art of Pastry. rios.png

TASTINGS
The design process begins with scheduling a tasting consultation. During the appointment, we will discuss all the details of your wedding desserts to ensure it suits your wedding vision. Feel free to bring any design inspiration, such as, color swatches, images, floral designs, etc. You’ll get to taste three different types of cakes and three fillings of your choice, as well as our Italian Meringue buttercream frosting. All items are served separately on a platter allowing you to sample different combinations. A tasting/consultation fee of $35 is required (accommodates 2 people) to book an appointment and is nonrefundable (waived for cakes provided by venue packages). Additional guests can be added at $5 each, a max of 4 people total will be allowed in tastings. We require a 48 hour notice for rescheduling. Tasting appointments last about an hour and are scheduled every hour on: Thursday (11am – 5pm) Friday (11am – 5pm) Saturday (10am – 3pm) As a courtesy to our customers, we may ask you to reschedule if you are more than 15 minutes late. Learn More Frequently Asked Questions How far in advance should I order my cake? A lot of work goes into our custom wedding cakes. We recommend scheduling a cake tasting 3-6 months prior to your wedding date. How much are your wedding cakes? Pricing for tiered cakes start at $5.50 per person, not including tax, specialty decor, or delivery. Base pricing includes a selection of buttercream design and standard flavors. Fondant designs begin at $6.40 per serving. Vegan or Gluten free cakes (not tiered) star at $8.25 per serving. What should I expect at my cake tasting? Cake tastings typically last an hour or less. Please come prepared to discuss design ideas at your tasting. We have photos of cakes we have made for previous clients, but would love to see any photos, your Pinterest, swatches of colors, floral, etc. for your cake inspiration. Cake and filling options are plated separate so that you can mix and match your choices together to make your own custom cake flavor. Do you deliver? Yes we deliver wedding cakes within the city and to most of the outlying suburbs. Deliver cost depends on distance. Please contact us for a delivery range and cost quote. We do not ship at this time. How many servings should I order? If your cake is plated and served at the table we recommend ordering enough cake for all guests. If you have other sweets or are serving the cake on a station, 75-80% is a good number to aim for. Consider whether or not you’d like to also save your top tier for your anniversary. Do you have a minimum order? Because we create cakes for all occasions, we don’t have a minimum order for weddings. We’d be happy to help you pick the size of cake most appropriate for your wedding size. If you are on a budget, we can provide smaller cutting cakes and sheet cakes as well. How do I pay for my cake? We accept debit, credit, checks (only for weddings) and cash. An initial deposit of 50% is required to confirm all wedding orders. The balance on all cakes is due 2 weeks prior to the wedding date. Do you rent cake stands/provide toppers? We do not rent cake stands, but if you need assistance, we would be happy to recommend a few of our favorite rental companies. We can always create a custom fondant topper (for an additional cost), or Etsy is a great resource for custom toppers (paper, wood, glass, etc).
